- Prepare the Jerk Marinade: Combine all the spices, garlic powder, sugar, olive oil, soy sauce, vinegar, orange juice, lime juice, scotch bonnet pepper, green onions, onion, and ginger in a food processor or blender. Blend until smooth.
- Marinate the Chicken: Place the chicken breasts in a large, resealable plastic bag. Pour the jerk marinade over the chicken, making sure each piece is well-coated. Seal the bag and marinate in the refrigerator for at least 4 hours, or overnight for best results.
- Cook the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade, shaking off any excess. Grill the chicken for 6-7 minutes per side, or until fully cooked through. The internal temperature should reach 165°F (74°C).
