St. Thomas Island-Style Garlic Butter Shrimp
This recipe captures the vibrant flavors of St. Thomas, blending local spices with fresh ingredients. Perfect for a beachside meal or a tropical dinner party.
Ingredients:
1. Prepare the Shrimp:
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh parsley, chopped
- Juice of 1 lime
- 1/4 cup coconut milk
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1/4 cup diced bell peppers (red or green)
- 1/4 cup diced onions
- 1 tablespoon chopped fresh cilantro (optional for garnish)
1. Prepare the Shrimp:
- Rinse the shrimp under cold water and pat dry with paper towels. Season with salt, black pepper, paprika, and cayenne pepper. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and bell peppers, and sauté until they are soft and fragrant, about 3-4 minutes.
- Add the seasoned shrimp to the skillet. Cook for 2-3 minutes on each side, or until they are pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic.
- Stir in the fresh thyme leaves and parsley.
- Pour in the coconut milk and lime juice, stirring to combine. Let the sauce simmer for 2-3 minutes, allowing the flavors to meld together.
- Return the cooked shrimp to the skillet, tossing them in the garlic butter sauce until they are well-coated and heated through, about 2 minutes.
- Taste and adjust the seasoning with salt and pepper as needed.
- Transfer the shrimp to a serving platter. Garnish with freshly chopped cilantro if desired.
- Serve immediately with a side of steamed rice, fresh salad, or crusty bread to soak up the delicious sauce.
Tips:
- For an extra tropical twist, serve the shrimp with a slice of fresh pineapple or a sprinkle of toasted coconut.
- Pair this dish with a refreshing beverage, such as a rum punch or coconut water, to enhance the island experience.
